The chef behind chef luis, a charming byob restaurant in downtown New Canaan, is Luis Lopez, a Guatemalan expatriate who began learning his trade at his mother’s side at the age of seven. In the time he has spent honing his skills since then (most recently with an eight-year stint at Solé in New Canaan), he has settled upon a basic axiom about cooking: “Food is about colors and making people feel happy.”
