Beach House Cafe's Smoked Salmon Eggs Benedict |

| Ingredients: |
- 6 ounces smoked salmon, sliced
- 2 English muffins, split and toasted
- 4 poached eggs
- 1 pound spinach, sauteed
- Hollandaise sauce (see recipe below)
- Hollandaise sauce
- 2 egg yolks
- 1/4 pound butter, melted
- 1 1/2 teaspoons lemon juice
- Tabasco to taste
- Salt and freshly ground blackpepper to taste

| Preparation: |
- Place salmon on English muffins.
- Top each half with a poached egg and some spinach.
- Dress with hollandaise sauce.
- Hollandaise sauce
- Whip egg yolks.
- Slowly add butter while whisking.
- Add lemon juice, Tabasco and salt and pepper to taste.
- Add water to adjust consistency if too thick.
- Serve immediately.
