Short Ribs Braised with Thyme and Rosemary

Ingredients:
  • 2 tablespoons oil
  • 2 three-inch short ribs
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 1 rib of celery, chopped
  • 1/4 cup tomato puree
  • 1 cup red wine
  • 1 bay leaf
  • 2 sprigs parsley
  • 4 sprigs thyme
  • 4 sprigs rosemary
  • 1 pint chicken stock
  • 1 tablespoon butter
  • Salt and freshly ground black pepper to taste
  • Sprigs of rosemary and thyme for garnish
Preparation:
  1. In a very hot pan, heat oil and brown short ribs on all sides.
  2. Remove ribs and set aside. Reserve.
  3. Add vegetables and brown over medium heat until well darkened, but not black.
  4. Add tomato puree and cook until well darkened, but not black.
  5. Add red wine and deglaze pan until almost dry.
  6. Add the herbs, the chicken stock and the reserved short ribs, and return to a boil.
  7. Reduce the heat as low as possible and cook until the meat falls off the bone (three to four hours, adding water if needed to prevent sticking).
  8. Strain sauce but do not press on vegetables.
  9. Reheat short ribs in the sauce; add butter, salt and pepper.
  10. Garnish with sprigs of rosemary and thyme.
