Fried Oysters

Ingredients:
  • 10 plump shucked oysters
  • 1 cup buttermilk
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • Salt to taste
  • 1/2 lemon
  • 2 tablespoons olive oil
  • 3 tablespoons sour cream
  • 1 tablespoon maple syrup
  • 1 pint blackberries
  • 1/4 cup pecans
Preparation:
  1. Dip oysters in buttermilk bath.
  2. Dredge oysters in equal parts flour and cornmeal until completely covered
  3. Shake off excess flour.
  4. Heat oil in large sauté pan,
  5. Cook oysters for about 2 minutes or until golden brown on each side.
  6. Remove oysters to paper towels to soak up excess grease.
  7. Season with salt.
  8. Mix sour cream and maple syrup in a bowl, whisking until smooth.
  9. Pour maple sour cream over oysters; add blackberries and pecans,
    and sprinkle with lemon juice.
