Cod in Puttanesca Sauce

Ingredients:
  • 1/3 cup olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrot
  • 1/2 cup chopped celery
  • 6 cloves garlic, minced
  • 1/2 teaspoon oregano
  • 1/4 teaspoon red chili flakes, or to taste
  • 1/2 cup white wine
  • 3 1/2 cups diced organic tomatoes
  • 1 cup tomato sauce
  • 1 tablespoon tomato paste
  • 1 cup sliced black olives
  • 1/3 cup capers (optional)
  • 1/4 cup vegetable oil
  • 6-8 cod fillets, about 6 ounces each
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste
  • Mashed potatoes (optional)
Preparation:

Sauce

  1. Heat olive oil in a large pot.
  2. Add onion, carrot, and celery.
  3. Sauté for 5 minutes or until just soft; add garlic, oregano, and chili flakes and stir for 1 minute.
  4. Deglaze pan with wine and then add diced tomatoes, tomato sauce, tomato paste, black olives, and capers.
  5. Reduce heat and simmer sauce for 20 minutes, stirring occasionally.
  6. Add butter and salt and pepper to taste.

Cod

  1. Heat vegetable oil in a large skillet.
  2. Add cod fillets (you can substitute halibut or haddock) and sauté for 3 to 5 minutes on each side; fish should be golden brown in color and opaque through.
  3. Serve cod individually on top of mashed potatoes and spoon sauce around potatoes.
