Branzino Marechiaro

Ingredients:
  • 2 tablespoons olive oil
  • 1 clove garlic, smashed
  • 1 14-ounce can San Marzano tomatoes
  • Salt and freshly ground blackpepper to taste
  • 1 fillet branzino, one pound or less
  • 3 jumbo shrimp, peeled and deveined
  • 3 manila clams, well scrubbed
  • Basil and Italian parsley leaves for garnish
Preparation:
  1. Preheat oven to 350 degrees.
  2. Heat one tablespoon of the olive oil in large ovenproof saute pan over medium heat.
  3. Add garlic and let brown slightly.
  4. Crush tomatoes, either by hand or by using a potato masher.
  5. Add to pan and season to taste with salt and pepper.
  6. Lower heat and cook until sauce is slightly thickened. (If sauce is too thick, stir in half a cup of hot water.)
  7. In another saute pan, heat remaining tablespoon of olive oil over medium heat.
  8. Slip in fillet and cook one minute.
  9. Add one cup of marinara sauce (reserving remainder for another use) and heat for thirty seconds.
  10. Tuck in shrimp and manila clams.
  11. Place in oven and cook until clams opens, about four minutes.
  12. Remove from oven and transfer to a warm plate. (Discard any clams that fail to open.)
  13. Garnish with basil and parsley.
