Bouillabaisse a la Minute

Ingredients:
  • 6 tablespoons olive oil
  • 1 cup shallots, chopped
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 4 large shrimp, peeled and deveined
  • 1 pound Prince Edward Island mussels
  • 1 pound Manila clams
  • 4 langoustines
  • 1 pound fresh turbot filet
  • 1/2 cup dry white wine
  • 2 cups fish stock
  • 4 cups plum tomatoes, peeled, seeded and chopped
  • Pinch of saffron
  • 1 lemon, quartered
  • 4 slices crostini bread, grilled
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon parsley, chopped
Preparation:
  1. Heat olive oil in large saucepan.
  2. Saute shallots until golden and season with salt and pepper.
  3. Add garlic and cook for one minute, then add all seafood and saute for two minutes at high heat.
  4. Pour in wine and fish stock, add tomatoes and saffron, and bring to a boil.
  5. Reduce to low and simmer for 15 minutes.
  6. Serve in shallow bowls, evenly distributing the shellfish.
  7. Garnish with lemon and bread drizzled with oil.
  8. Sprinkle with parsley.
