Let’s face it- bright colors have taken over the fashion trends these days. From turquoise nails and fuschia pants, to the Cambridge satchel’s latest version in highlighter yellow, green and pink, women of all ages are colorfully enhancing their wardrobes and brightening their choices from accessories, to bags to clothes.
When it comes to planning a wedding however, history has illustrated a lack of color. Brides have clung to traditional pale pinks and pewters and envisioned their momentous occasion with accents of crisp white lace and elegant champagne and blush tones. Every detail, from the shoes to the cake were designed to illustrate a consistency in color. Not any more ladies, meet the modern day bride.
Before speaking with wedding cake designer, Megan Palmer of Palmer's Bakery, I anticipated the latest trends in wedding cakes should include a style with more tiers or perhaps a new design with zig zags or polka dots. My predictions were way off. Instead, Megan explained that the latest trend in wedding cakes is color! “I haven’t booked a white or vanilla wedding cake in a long time” she explained.
Brides and grooms are now choosing their wedding cakes with pops of bright vibrant palettes ranging from lime green to strawberry red.
Bakeries such as Palmer’s Bakery and Cake Suite in Westport are offering bolder flavor choices to further entice the creative couples. In addition to the classics such as red velvet or tuxedo (a half chocolate and vanilla), brides have their choice of more fruity tastes such as chocolate raspberry or peaches and cream and coconut lemon. The latest flavors and most popular fall in the “fun flavor” category. Cakes like mocha madness, a rich chocolate base filled with rich mocha icing or chocolate oreo and salted chocolate caramel are taking high priority over a simple chocolate or vanilla inside.

Fairfield County brides are not stopping at simply having bright colors on the outside and mouthwatering flavors on the inside. The most popuar trend in wedding cakes is the ombre style. Available in an array of colors, ombre cakes are distinct in that each layer of the cake is a different shade. A baker’s dream, these wedding cakes are meant to begin with one color and then as each layer is cut to introduce either a brighter or lighter variation of the original hue. When cut open they create a visual rainbow that leaves the bride and groom and guests in awe!

While the wedding cake can be an exciting product for both the bride and groom, bakeries are now seeing an increasing desire to have a groom's cake as well. Groom's cakes are no new trend, dating back to the armadillo cake in the popular film Steel Magnolias, couples are placing a huge empahsis on creating a unique and personalized second cake. Bakeries are going to great lenghts to incapsulate the groom's favorite sports team, movie or hobby as seen in these beautiful masterpieces below. The cakes are so detailed, its hard to want to eat them at all.
